Evelyn Chick

Owner

Evelyn Chick is a highly accredited specialist in the world of wine, spirits and the anatomy of all things hospitality.  She has a gleaming resume of globally-recognized certifications including WSET Sommelier and Certified Specialist of Spirits. She combines a unique talent of skilled bar personality and sought-after business acumen in developing, efficient, acclaimed and cutting edge bar experiences for media outlets, multimillion dollar venues and notable brands with her consultancy Evelyn Chick Projects Inc. with clients such as Smorgasburg Toronto, Westin Hotel Group and Restaurants Canada. In 2021 she opened Ahma, a dynamic pop up and event space on Queen St W as well as Love of Cocktails - a cocktail experience and gift set company. Her book 'For the Love of Cocktails!' is slated for release in September 2023, and her newest venture is SIMPL THINGS  boasts an all day food and beverage collective with a homely, nostalgic feel.

Cody Wilkes

Resident Chef, Chef Cody

Cody Wilkes is the chef/owner of Pasta CartL & Chef Cody. He has been working professionally in hospitality for over twenty years. The last decade plus has been in senior management of various restaurants and restaurant groups. CDC Marben (2016) Sr Sous Chef Gusto Restaurant Group (2018) CDC Mattachioni (2021). He has been looking to find something as a perfect creative outlet and follow my dreams - opening pasta cartL. He loves ethically sourced foods, from the dairy products to the vegetables, flour to the chocolate, every ingredient sourced tries to be as local as possible, in respect to the makers and the planet. He is a die hard cook, very hands on in the kitchen, and loves spending time with his son, Nate.

Eva Chin & Trevor Lui

By dusk, the Simpl Things kitchen transforms into an ode to Neo-Chinese small plates with classic touches expertly curated by Executive Chef Eva Chin. “Fat Bao” plays on the culture of prosperity, luck and wealth which transcends in every delectable bite. Born and raised on a farm in Hawaii, chef Eva Chin grew up immersed in the breathtaking bounty that Mother Nature has to offer, inspired by the mountains, the ocean, and earth. She learned at an early age that food is the connection between people and the land. This connection is translated into her cuisine. Trevor has made a life and career surrounded by the sights and sounds of food and drink. He has spent more than 20 years producing thousands of event experiences as an executive for major entertainment venues, top-tier hotels & casinos for the likes of heads of states and Hollywood starlets.
